Christmas is just around the corner! In our family the festival is not complete without our famous fruit and spice Christmas Pudding. It is made with activated, sprouted and fermented quinoa and buckwheat, sweetened with fresh banana, orange juice and date, and spiced up by ginger, aniseed, cloves for your nostalgic taste buds.
This makes our pudding gluten, dairy, refined sugar-free, and also much lighter on the stomach! Why not celebrate the festival healthier this year?
We made it so easy for you. Forget about mixing and baking, simply reheat puddings in microwave, steamer or oven. Now the question is, what to go on top of the pudding?

Cashew Brandy Creme
For 2 Spring Wholefoods Christmas Puddings
1 cup raw cashews, soaked in filtered water overnight
¼ cup coconut oil
¼ cup filtered water
1 tsp vanilla powder, paste or extract
2 tbs pure maple syrup
2 tbs brandy
Pinch flaked sea salt
1. Drain the cashews and place into a blender or food processor with the remaining ingredients.
2. Blend for a few minutes until very smooth.
3. Set aside in the fridge until ready to use.
