1 cup cubed sprouted seed banana bread
1/4 cup + 2 tbsp almond milk
1 tsp ground flax
1/4 tsp ground cinnamon and nutmeg
1/4 tsp vanilla extract
Pinch of salt
Frozen mixed berries
Dark chocolate chips
Preheat oven to 180oC
Add cubed bread to a small baking dish or ramekin
In a large bowl, whisk together milk, ground flax, cinnamon, nutmeg, vanilla, and salt, then add to the baking dish.
Sprinkle on chocolate chips and frozen mixed berries, and press lightly into the pudding.
Bake for 10-15 minutes, until golden and the bread pudding is set (can retain some softer/pudding-like consistency, but shouldn’t be sloshy).
Remove from oven and let cool slightly to serve. Can also serve at room temperature or chilled, but warm is the tastiest!
